Plantations

Our plantations are located at altitudes that fluctuate from 2,000 to 4,500 ft above sea level.  The average temperatures are 15°C (59°F), the lowest, and 28°C (82°F), the highest, and the average daily temperature is 24°C (77°F). We have soils rich in volcanic nutrients which create optimal conditions for the ideal growth of trees and fruit.  Due to favorable climatic conditions, the farms produce nuts all year long.

Our process

The processing plant at Rio Bravo is equipped with the latest state of the art drying, cracking and color sorting equipment. Its adherence to high quality standards and commitment to food safety have earned it the SQF Manufacturing certification, recognized by the Global Food Safety Initiative.
STEP 1

Nuts WIS (wet-in-shell) with a range between 16-22% moisture content arrive from the orchards to the processing plant. They are sampled and analyzed for quality and placed into drying tanks for 8 – 10 days until the nuts reach a kernel moisture content of 1.5%.

STEP 2

Nuts are mechanically cracked to remove the hard shell. Then a mechanical selection process takes place with shaker screens, air separators and electronic color sorters.

STEP 3

The kernel goes through a final hand selection process before being prepared for packing and export, upon approval of our quality control department.

STEP 4

The kernel is vacuum packed in plastic bags and placed into 25 lbs.-carboard boxes (11.34kg), to then be stored in refrigerated warehouses inside our processing plant prior to export.

FARMS

Our orchards are located along the south coast of Guatemala, directly supplying our processing facility with the majority of the nuts we process. In addition, we also secure product from select independent growers that we have worked with over many years.
Macadamia trees thrive in the rich volcanic soils of Guatemala’s Pacific South coast combined with the tropical rainfall patterns throughout the year, allowing for the ideal growing conditions to produce the highest quality nuts for which Mayan Gold Macadamia has become so well known.
